Mexican Nourish Bowl
Ingredients
1/2 cup brown rice
 1 large sweet potato or pumkin
 2 tomatoes
 1 capsicum
 1 lebanese cucumber
 2 spring onions
 Handful rocket
 1/3 organic black beans
 2 ripe avocadoes
 olive or hemp oil
 coconut oil
 himalayan salt
 pepper
 Optional -
 Tumeric & black pepper essential oil
 Fermented cheese
 organic salsa
 
 Pre cook 1/2 cup brown rice (add 1 drop doTERRA Tumeric essential oil & 1 drop Black pepper essential oil to the rice - great to support inflammation)
With 1 Large sweet potato or 1/2 butternut pumpkin semi cooked (or a mixture of both),
 Coat in 2 - 3 tablespoons coconut oil, sprinkle with 1/2 teaspoon of cumin, ground coriander, oregano, paprika plus touch of cayenne and salt & pepper
 Ensure that the sweet potato or pumpkin is coated in oil and seasoning
Cook sweet potato or pumkin in the oven on a tray for 10 – 15 minutes, until golden broown
 
Rinse 1/3 tin organic black bins 
 
Dice capsicum, cucumber (Lebanese), tomatoes, spring onions
Prepare bowl with rice first, then roasted sweet potato/pumkin
Add greens
Add black beans
Add salad
Top with cashew cheese, salsa & guacamole
